Organized by season, For Cod and Country by chef Barton Seaver is a full-color exploration of recipes showcasing fish caught at specific times of year, plus “a fifth season” for seafood available year-round. In addition to promoting a diverse selection of seasonal species, Seaver’s holistic approach to sustainability covers topics from wellness and portion size, to fishermen and catch methods, to the role of a fish in the marine food web. Also included are suggestions of healthful and ocean-friendly substitutes for popular yet overharvested or high mercury-content species.
The hardcover book is 304 pages and contains hundreds of sustainable seafood recipes and full-color photographs. It was a 2012 winner in Editorial in the HOW Magazine International Design Awards, the leading business and creativity magazine for graphic designers.
